Guys, try this:
4 oz ground lamb; 3-4 slices of spicy pickle; 1 slice red onion; 1 slice tomato; 1 spelt english muffin, toasted; goat cheese
•Form the meat into a patty and season liberally with salt and pepper. Cook on a hot cast iron skillet (I usually do 5 minutes on the first side, flip, 3 minutes on the second).
•Spread goat cheese on both halves of the toasted english muffin. Stack your toppings on the cheese.
•Once the lamb is cooked, set it to rest on the toppings. Give it about 3-5 minutes so the juices don’t run out when you cut or bite into it.
•Top with the other half of muffin and CHOW DOWN.
